Bonfire sausages & beans
A dash of BBQ sauce ramps up the flavour in this mouthwatering recipe

Ingredients
300g pack Co-op sausages
1 tbsp Co-op olive oil
1 onion, chopped
1 courgette, diced
1 orange pepper, diced
1 garlic clove, crushed
400g can Co-op Italian chopped tomatoes
400g can mixed beans, drained and rinsed
3 tbsp Co-op BBQ sauce
Chopped flat leaf parsley, to garnish
Crusty bread, to serve;
Method
1. Cook the sausages under a preheated medium-high grill for 14 mins, turning every 3-4 mins, until golden and cooked through2. Meanwhile, heat the oil in a large frying pan over a medium-high heat
3. Cook the onion, courgette and pepper for 4-5 mins, stirring frequently
4. Add the garlic and cook for a further 2-3 mins, until the vegetables are just softened
5. Stir in the tomatoes, beans, BBQ sauce and 250ml water and bring to the boil
6. Let the mixture bubble over a medium heat for a further 7-8 mins, stirring occasionally, until the beans are tender and the sauce has thickened Season to taste
7. Halve the grilled sausages crossways, then add to the pan and heat through for a further 1-2 mins
8. Garnish with chopped parsley and serve with crusty bread
